CHICKEN THIGHS & SAUCY MUSHROOMS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Handful mixed dried mushrooms
2 cups chicken stock
1 tbs oil
8 bone in skin on chicken thighs
2 tbs butter
3/4 pound sliced mixed mushrooms
1 onion, chopped
2 cloves garlic, chopped
2 tbs thyme, chopped
1 bunch parsley, chopped
1 tbs tomato paste
14.5 oz can diced tomatoes
1/2 cup wine or broth
Crusty bread
In a pan, cook dried mushrooms in stock until mushrooms soften and liquid reduces slightly. In a skillet, heat oil. Season chicken, cook until browned. Transfer to a plate. *Add butter and sliced mushrooms to skillet, cook until lightly browned, then add onion, garlic, thyme, and parsley, season. Stir in tomato paste, cook 1 min. Add tomatoes and wine, bring to a simmer. Add dried mushrooms and stock. Return chicken to pan, cook through. SERVE with bread & ENJOY...
