[SimplifyMe] Potato-Crusted {Pork} with Peas

 

POTATO-CRUSTED PORK WITH PEAS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

3 eggs
1/4 cup flour
2 pounds potatoes
1 pound boneless pork loin, sliced into four cutlets, pounded
1/2 cup oil
3 slices bacon
1 clove garlic, minced
10 oz box frozen peas
1 cup applesauce

In a bowl, beat eggs. In a second bowl, mix flour with salt and pepper. Shred potatoes. Wrap potatoes in a towel, squeeze out as much moisture as possible, transfer to a bowl. Season with salt and pepper. Dredge cutlets in flour, dip in egg, then press shredded potato onto both sides of cutlets to coat. *In a skillet, heat oil. Fry cutlets until potatoes are crispy and browned. Drain cutlets, keep warm. Cook bacon in skillet until crisp, transfer to a plate. Discard all but 1 tbs bacon fat from skillet. Add garlic, cook 1 min. Add peas, cook until hot. Chop bacon, stir in into peas, season. SERVE cutlets with peas and applesauce & ENJOY...
