GRILLED CHEESE SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 1/2 pounds smoked mozzarella cheese, sliced
3 tbs oil
1/2 cup breadcrumbs
1 pint cherry tomatoes
1/3 cup basil
6 cups arugula
2 tbs balsamic vinegar
In bowl, toss mozzarella slices with 2 tbs oil. Pour breadcrumbs into a dish. Press mozzarella slices into breadcrumbs to coat both sides, place on cookie sheet. Freeze 20 min. Cut tomatoes into halves. Tear basil. *Spray skillet with cooking spray, heat. Place cheese slices on pan. Cook until crumbs are golden, turn cheese slices over. Cook another 2 min. Transfer to a platter. *In bowl, toss arugula with tomatoes, balsamic, basil, remaining oil, salt and pepper. SERVE cheese slices over salad & ENJOY...
