QUICK SAUSAGE & LENTIL SOUP
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
SAUSAGE---
1 pound ground pork
2 tbs red wine vinegar
2 tbs minced parsley
2 cloves garlic, minced
1 tsp crushed red pepper
1 tsp granulated onion
Pinch nutmeg
LENTILS---
1 cup dried lentils
2 bay leaves
1 onion, halved
SOUP BASE---
3 tbs oil
1 potato, peeled
2 carrots, peeled
1 onion
3 cloves garlic
2 ribs celery
1 bunch parsley, chopped
4 cups beef stock
Grated cheese
In a bowl, combine sausage ingredients, let stand 15 min. In a pan, place lentils with bay leaves, onion, and salt. Cover with 2" water, bring to a boil, cook until tender. Drain, discard bay leaves and onion. *In a pot, heat 3 tbs oil. Pulse vegetables and parsley in processor or blender until chopped, transfer to pot. Season, cover, let ingredients sweat in oil 8 min. Add stock and 2 cups water, bring to a boil, then simmer until potatoes are tender. *Heat oil in a skillet. Cook sausage until brown. Drain fat, then stir sausage into soup along with lentils. SERVE soup in bowls, top with cheese & ENJOY...
