PEACH SALSA & PORK CHOPS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 mango, peeled, diced
2 peaches, pitted, diced
1/3 cup minced onions
2 tbs minced basil
1 tsp grated ginger
1 tbs lime juice
4 pork chops
1/2 cup Caribbean jerk marinade sauce
In bowl, combine mango, peaches, onions, basil, ginger, and lime juice. Season with salt and pepper. *Heat grill. Coat pork with cooking spray, brush with marinade. Grill until done, brushing with marinade. Let rest 5 min. *SERVE pork chops topped with peach salsa & ENJOY...
