PEPPER PIZZA WITH CHEESES
MAKES 4 SERVINGS.
4 tsp oil
2 cloves garlic, crushed
15 oz can crushed tomatoes
1/4 cup basil, torn
2 bell peppers, seeded, cut into strips
1 1/4 pounds pizza dough, divided into 4 balls
12 oz mozzarella, sliced
1/4 cup grated Parmesan
Prepare grill. In pan, heat 2 tsp oil. Add garlic, cook 30 seconds. Add tomatoes, salt and pepper. Heat to simmering. Simmer until slightly thickened. Remove from heat. Stir in basil, set aside. *In bowl, toss peppers with remaining oil. Grill until tender and charred in spots. Transfer to cutting board, slice peppers. Stretch and roll dough balls as thinly as possible to 8" diameter. Place rounds of dough on grill. Grill until grill marks appear. Divide sauce, peppers, and mozzarella among pieces of dough. Grill until cheese melts, transfer pizzas to platter. Sprinkle pizzas with Parmesan. SERVE & ENJOY...
