TOMATO TOASTS WITH SOUP
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
6 slices bread, crusts removed, cut into cubes
1 seedless cucumber, peeled, sliced
2 cups seedless green grapes
1/2 cup blanched almonds
2 cloves garlic, peeled
2 tsp sherry vinegar
1/4 cup plus 2 tbs oil
2 tomatoes, cut in half
8 slices bread, toasted
In bowl, soak bread cubes in 1/2 cup water, set aside. In blender, pulse cucumber, grapes, almonds, garlic, 1 1/2 cups water, and salt until chopped. Add soaked bread, puree until smooth. Pulse in vinegar and 1/4 cup oil. Refrigerate until cold. *Grate tomatoes into a bowl. Discard skins. To tomato pulp, add remaining oil and pinch salt. To serve, divide soup among bowls. Spoon tomato mixture onto toasts. SERVE with soup & ENJOY...
