EASY CHIPS 'N' FISH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 large potatoes, peeled, cut into 12 wedges
1 1/2 tbs olive oil
1 1/2 tbs Old Bay seasoning
1 cup club soda
1 cup flour
1 tsp salt
Canola oil
4 fish fillets, halved lengthwise
Tartar sauce
Heat oven to 450 degrees. Toss potatoes with oil and Old Bay, arrange on a baking sheet. Bake until golden and crisp 20 min. *In a bowl, whisk club soda, flour, and salt until smooth. In a skillet, heat 1/2" canola oil. Dip fish into batter, the place in skillet. Cook fish until batter is light golden. Drain on paper towels. SERVE with fries and tartar sauce & ENJOY...
