CORN FRITTERS WITH SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 cans 15 oz each black beans, drained
1 avocado, cut into cubes
1/2 cup chopped chives
1/4 onion, sliced
3 tbs lime juice
4 cups corn
1/2 cup flour
2 eggs, beaten
2 cloves garlic, chopped
1 tsp cumin
3/4 cup oil
In bowl, combine beans, avocado, chives, onion, lime juice, and salt, toss. In another bowl, combine corn, flour, eggs, garlic, cumin, and salt until mixed. *In skillet, heat oil. Add batter to oil by 1/4 cupfuls, forming 4 mounds, press tops to flatten. Cook until browned on each side. Transfer to cookie sheet in 225 degree oven to keep warm. Repeat with remaining batter. SERVE with salad & ENJOY...
