CAULIFLOWER TUNA SPAGHETTI
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 head cauliflower
1/4 cup olive oil
6 oz canned tuna, drained
1 onion, chopped
4 cloves garlic, chopped
1 bunch parsley, chopped
1 jalapeno pepper, seeded, chopped
1/2 cup wine or broth
1 pound spaghetti
Bring a pot of water to a boil. Trim cauliflower into florets. Salt water, cook cauliflower 3 min. transfer to a plate. Return water to a boil. *In a skillet, heat oil. Add tuna, onion, garlic, parsley, and jalapeno. Cook 3 min. then add wine. *Cook pasta to al dente, adding 1/2 cup pasta cooking water to tuna mixture. Drain pasta, add to tuna mixture along with cauliflower. Toss, season. SERVE & ENJOY...
