SPICY CHICKEN VEGGIE SOUP
MAKES 4 SERVINGS.
4 tomatoes, chopped
1 onion, halved
Two 15 oz cans chickpeas, drained
2 cups shredded cooked chicken
2 cups okra, sliced
2" piece ginger, peeled
1/2 jalapeno pepper, seeded
1 tsp curry powder
3 tbs oil
Plain yogurt and bread
Pulse 3 tomatoes, onion, ginger, jalapeno, curry, and salt in a processor or blender until smooth. Heat oil in a pot. Add tomato mixture, cook until darkened and paste like. *Add 2 1/2 cups water to pot, bring to a simmer. Add chickpeas, cook until sauce thickens slightly. *Stir in chicken and okra, cook until okra is tender. Divide among bowls, top with yogurt and remaining tomato. SERVE with bread & ENJOY...
