GARLIC SOUP---Yummy and easy.
MAKES 6 SERVINGS.
1/4 cup oil
2 heads garlic, smashed, peeled, plus 3 cloves, sliced
1 onion, chopped
1 cup white wine
2 sprigs thyme
1 bay leaf
1 piece Parmesan cheese rind, plus 1/2 cup grated Parmesan
2 cups cubed crusty bread
1/3 cup sour cream
Dill
Heat 1 tbs oil in a pan. Add smashed garlic and onion, cook until lightly golden. Add wine, thyme, bay leaf, salt, pepper and rind. Bring to a simmer, cook until reduced by half. Add 5 cups water, bring to a simmer, cook until garlic is soft. Remove from heat, add bread, let soak 10 min. *Remove thyme, bay leaf, and rind from pan, stir in grated cheese, sour cream, and salt. Transfer soup to a blender, puree until smooth. Season. Combine remaining oil, sliced garlic, and a pinch of salt in a skillet, cook until garlic is golden. Divide soup among bowls. Top with fried garlic, some garlic oil, and dill. SERVE & ENJOY...
