CAULIFLOWER SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Whisk 2 tbs oil, 1/2 tsp cumin, and a pinch each of salt, cinnamon and cayenne, toss with 1 head cauliflower florets and 2 halved bell peppers on a baking sheet. Roast at 450 degrees for 15 min. Whisk 1 tbs each oil and lemon juice, 1 tsp maple syrup, and salt. Toss with roasted vegetables, 2 sliced celery stalks and some chopped parsley and hazelnuts. Season. SERVE & ENJOY...
