CHEESY CUCUMBER SALAD
MAKES 4 SERVINGS.
1 onion, sliced
1/4 cup red wine vinegar
Grated zest and juice of 1 lemon
1 tsp honey
1 tsp oregano
1/4 cup oil
12 cherry tomatoes, quartered
1 cup olives, halved, pitted
2 cucumbers
4 oz grated cheese
Whisk vinegar, zest, juice, honey, oregano, salt and pepper in a bowl. Whisk in oil. Add tomatoes and olives, toss. Peel cucumbers, trim ends, halve lengthwise, slice crosswise, add to bowl with tomatoes. Add onion to bowl, toss. Divide salad among plates, top with cheese, season. SERVE & ENJOY...
