WHOLE GRAIN PANCAKES
MAKES 4 SERVINGS. HALF RECIPE FOR 2 SERVINGS.
PANCAKE MIX---
3 cups whole wheat flour
3 cups all purpose flour
2 tbs sugar
1 tbs baking powder
1 tbs salt
1 1/2 tsp baking soda
PANCAKES---
2 cups pancake mix
2 tbs ground flaxseed
1 pint buttermilk
2 eggs
4 tbs butter, melted
Maple syrup
FOR PANCAKE MIX---In a bowl, combine flours, sugar, baking powder, salt and baking soda. FOR PANCAKES---In a bowl, combine 2 cups pancake mix and flaxseed. In a bowl, whisk buttermilk, eggs and butter. Add egg mixture to pancake mix, whisk until combined. *Heat a skillet. Ladle 1/4 cupfuls of batter into skillet, cook until brown on bottom, flip, cook 4 min. more. Transfer pancakes to a plate, repeat with remaining batter. SERVE WITH BUTTER AND MAPLE SYRUP OR FRUIT TOPPINGS & ENJOY...
