ASPARAGUS LEMON CHICKEN
MAKES 5 SERVINGS.
1 bunch asparagus, trimmed
4 slices bacon, cut into pieces
1 pkg chicken breast cutlets plus 1/2 tsp lemon pepper
Black pepper
14.5 oz can chicken broth
2 tbs flour
1 lemon, cut into wedges
Heat 1/2" water in a skillet. Add asparagus, cook 3 min. Drain. Cook bacon in a skillet until crisp. Remove to paper towels. Discard all but 1 tbs of drippings. Season chicken with pepper. Sprinkle chicken with lemon pepper. *Cook chicken in hot drippings 3 min. Turn over, cook 4 min. more. Remove chicken from skillet. Whisk together broth and flour. Add to skillet, bring to a simmer. Add chicken and asparagus. *Cook until chicken is cooked through and asparagus is warm. Squeeze lemon wedges over dish, sprinkle with bacon. SERVE & ENJOY...
