TOMATOES IN TOAST HOLES---MAKES 2 SERVINGS.
Using a cookie cutter the same size as the 2 tomato slices, cut a hole in the center of each of 2 slices bread, toasted. Place toast and toast circles on baking sheet, fit tomato slices inside. Brush toast and tomato with 1 tbs olive oil, sprinkle with 2 tbs grated cheese. Broil until cheese is golden. Sprinkle with pepper. SERVE & ENJOY...
