SEAFOOD-VEGGIE CHOWDER SLOWCOOKER
MAKES 5 SERVINGS.
2 onions, sliced
2 carrots, peeled, sliced
1 rib celery, diced
1 pound potatoes, peeled, diced
2 cups milk
2 cups vegetable broth
1 tsp Old Bay
1/2 tsp garlic powder
Pinch nutmeg
1 bunch asparagus, trimmed, cut into pieces
1/2 pound peeled deveined shrimp, cut in half
1/2 pound scallops
1/2 pound lump crab meat, torn into small pieces
3 tbs instant potato flakes
Salt and Pepper
Coat slowcooker bowl with cooking spray. Add onions, carrots, celery and potatoes. Whisk in milk, broth, Old Bay, garlic and nutmeg, cook on low 6 hours 45 min. *Stir in asparagus, shrimp, scallops, crab and potato flakes. Cook on low 15 min. Season with salt and pepper. SERVE WITH LEMON WEDGES & ENJOY...
