ICED CINNAMON ROLLS
MAKES 12 SERVINGS.
1/2 cup plus 2 tbs milk
1 1/4 oz pkg active dry yeast
3 cups flour
1/4 cup sugar
1 tsp salt
1/4 cup unsalted butter, melted
1/4 cup plus 1 tbs unsalted butter
Oil
1/4 cup brown sugar
1 tsp cinnamon
1 cup powdered sugar
1 tsp vanilla
In a pan, heat 1/2 cup milk and 1/2 cup water until warm. In a bowl, whisk together yeast, 1 cup flour and 2 tbs sugar. Stir in milk mixture, set aside until thick and foamy. Mix in salt and melted butter. Mix in remaining flour, let rise until doubled in size. *Coat a 9x13" pan with oil. Line pan with parchment, leaving overhang, coat parchment. In a bowl, combine brown sugar, cinnamon and remaining sugar. Punch down dough, knead until it comes together. Roll into a 9x12" rectangle. Spread with 1/4 cup butter, sprinkle with cinnnamon sugar mixture. Roll dough into a log. *Cut off pieces of dough to make 12 rolls. Transfer rolls to pan, let rise until rolls are touching. Heat oven to 375 degrees. Bake rolls until golden 27 min. In a pan, whisk together powdered sugar, vanilla, remaining milk and remaining butter, cook until smooth. Drizzle over cinnamon rolls.
