PINEAPPLE HAM FRIED RICE
MAKES 4 SERVINGS.
1 cup long grain rice
1 tbs oil
6 oz sliced ham, cut into pieces
1 pound pineapple, peeled, cored, cut into pieces
1 large red bell pepper, sliced
1 large onion, sliced
1 jalapeno, seeded, sliced
1" piece ginger, peeled, cut into matchsticks
2 large cloves garlic, chopped
Lime wedges
Cook rice according to package directions. Heat oil in a skillet. Add ham, cook until beginning to brown. Add pineapple, cook until beginning to brown. Add pepper, cook 2 min. *Add onion, cook 3 min. Add jalapeno, garlic, and ginger, cook until vegetables are tender. Add rice to skillet, toss. SERVE with lime wedges & ENJOY...
