BERRY TOPPED CHIA-SEED PUDDING
MAKES 2 SERVINGS.
1/2 cup vanilla flavored unsweetened almond milk
1/2 cup plain Greek yogurt
1 tbs maple syrup
1/2 tsp vanilla
Salt
1/8 cup chia-seeds
1/2 pint strawberries, hulled, chopped
1/8 cup sliced almonds, toasted
In a bowl, whisk first 5 ingredients until blended. Whisk in chia seeds, let stand 30 min. Refrigerate. In a bowl, toss berries with 2 tsp maple syrup. Mix in almonds. Spoon pudding into 2 bowls, mound berry mixture on top. SERVE & ENJOY...
