[SimplifyMe] Vanilla Doughnut {Holes}

 

VANILLA DOUGHNUT HOLES
MAKES 4 1/2 DOZEN.

3 3/4 cups flour
1/4 cup plus 2 tbs sugar
2 pkts 1/4 oz each rapid rise yeast
1 1/2 tsp salt
1 1/2 cups milk
1 egg
1 tsp vanilla
6 tbs butter
10 cups oil

In a bowl, combine flour, sugar, yeast and salt. In a pan, warm milk. Transfer to a bowl, whisk in egg and vanilla. Add milk mixture and butter to flour mixture, mix until blended. Knead dough until shiny and tacky. *Butter a bowl. Add dough. Let rise until doubled in size. Line 1 baking sheet with parchment, fit another with a wire rack. Turn out dough, sprinkle with flour. Pat into a 10x12" rectangle. *In a pot, heat oil. Using a 1 1/2" round cutter, cut out rounds, transfer to parchment lined sheet. Transfer 5 rounds to oil. Fry until golden. Transfer doughnuts to rack repeat with remaining dough. Roll still warm doughnut holes in cinnamon sugar or glaze them. SERVE & ENJOY...
