[SimplifyMe] Eggs with {Cheesy Toast}

 

EGGS WITH CHEESY TOASTS
MAKES 2 SERVINGS.

1/8 cup oil
2 leeks, trimmed, sliced into half moons
Salt and Pepper
1/2 pound small mushrooms, quartered
1 clove garlic, chopped
3 oz spinach, thick stems removed
1/2 tbs lemon juice
1 tbs chopped parsley
2 eggs
2 slices bread
1 oz grated cheese

Heat 1/2 tbs oil in a skillet. Add leeks, salt and pepper, cook until tender, transfer to a plate. Heat 1 tbs oil in a skillet. Add mushrooms, cook until golden and tender. Add garlic to skillet, cook 1 min. *Return leeks to pan along with spinach, cook until spinach begins to wilt. Remove from heat, stir in lemon juice and parsley. Heat broiler. Heat remaining oil in a skillet. *Crack eggs into pan, cook to desired doneness. Place bread on foil lined baking sheet. Sprinkle with cheese. Broil until cheese starts to brown. SERVE eggs and cheesy toast with leek mixture & ENJOY...
