[SimplifyMe] Animal Lemon {Easter Cakes}

 

ANIMAL LEMON EASTER CAKES---Little oval cakes coated with poured fondant and decorated with colored frostings to look like animals. No picture.
MAKES 40.

1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter
3/4 cup sugar
2 tsp lemon zest
2 eggs
2 tbs milk
2 tbs lemon juice
Two 16 cavity small silicone oval pans
Poured fondant
Colored frostings

Heat oven to 350 degrees. Coat two silicone oval pans with cooking spray. In a bowl, whisk together flour, baking powder and salt. Beat butter, sugar and zest in a bowl until fluffy. Beat in eggs. Alternately add flour mixture, milk and juice, mixing until incorporated. *Divide batter among pans. Place on baking sheets, bake until done 17 min. Transfer to a wire rack, repeat with remaining batter. PREPARE POURED FONDANT. Keep pan over very low heat. Hold one cake on a fork, spoon fondant over top, being careful to coat all the sides, then transfer to a wire rack. Repeat with remaining cakes and fondant. Once dry, decorate with colored frostings. Make little sheep, chicks, bunnies and decorated eggs. SERVE & ENJOY...POURED FONDANT---In a pan, combine 1 pound powdered sugar, 1/4 cup light corn syrup and 3 tbs water. Stir until melted and warm.
