[SimplifyMe] Fish with {Potatoes}

 

FISH WITH POTATOES
MAKES 4 SERVINGS.

1 1/2 pounds potatoes, quartered
12 oz pkg green beans
1 pint cherry tomatoes
3/4 cup pitted olives
2 large onions, cut into wedges
6 cloves garlic, crushed
1 sprig rosemary, leaves chopped
1/4 cup plus 1 tbs oil
Salt and Pepper
4 fish steaks
1 tsp herbes de Provence
2 lemons, halved

Heat oven to 475 degrees. On a baking sheet, toss first 7 ingredients with 1/4 cup oil. Season with salt and pepper, spread on baking sheet. Roast until potatoes are tender 25 min. *Heat a grill. Season fish with herbes de Provence, salt and pepper. Drizzle pan with remaining oil. Add lemons, cook until browned. Transfer to a plate. Add fish, cook to desired doneness. SERVE fish with vegetables and lemons & ENJOY...
