LEAN EGGS BENEDICT
MAKES 4 SERVINGS. HALF RECIPE FOR 2 SERVINGS.
3/4 cup tofu
2 tbs oil
1 clove garlic, chopped
1 1/2 tsp plus 1 tbs white balsamic vinegar
1/8 tsp turmeric
4 eggs
4 slices Canadian bacon
2 English muffins, split, toasted
1 cup torn spinach
1/8 tsp cayenne
Mix tofu, oil, garlic, 1 1/2 tsp vinegar and turmeric until smooth. Transfer to a pan, cook until heated through, season with salt and pepper, keep warm. In a skillet, bring 2" water to a simmer, add remaining vinegar. Crack 1 egg into a bowl, pour it into water, repeat with remaining eggs, cook until whites are firm.*Transfer eggs to a paper towel. In a skillet, cook bacon until heated through. Top each English muffin half with 1 slice bacon, 1/4 cup spinach and 1 egg. Spoon a quarter of the sauce over each egg, sprinkle with cayenne.
