EGGS WITH HASH
MAKES 4 SERVINGS. HALF RECIPE FOR 2 SERVINGS.
3/4 cup sour cream
1/3 cup ketchup
3 tbs pickle relish
Salt and Pepper
1 tbs oil
2 tbs butter
1 1/4 pounds potatoes, cubed
1 onion, chopped
1 pound cooked turkey, chopped
1 pound sauerkraut, drained
1 1/2 cups shredded cheddar cheese
8 eggs
In a bowl, mix sour cream, ketchup and relish. Season dressing with salt and pepper. In a skillet, heat oil. Melt butter in oil, then add potatoes, cook until browned, season. Add onion, stir 3 min. Add turkey, cook until lightly browned. *Stir in sauerkraut, cook to heat through. Sprinkle with cheese, then tent with foil to melt cheese. In a skillet, heat a little oil. Add eggs, cook to desired doneness. Divide hash among plates. Drizzle with dressing, top with eggs. SERVE & ENJOY...
