CURRIED TOFU SCRAMBLE
MAKES 4 SERVINGS. HALF RECIPE FOR 2 SERVINGS.
1 tbs oil
2 green onions, sliced
12 oz tofu, pressed dry, then crumbled
1 1/2 tsp curry powder
3 tbs mango chutney
1/4 cup parsley
In a skillet, heat oil. Cook green onions 2 min. Stir in tofu and curry powder. Cook 4 min. Season. Top with chutney and parsley. SERVE & ENJOY...
