VEGGIE LAMB CHILI
MAKES 2 SERVINGS.
1 1/2 tbs olive oil
1/2 pound lamb stew meat
1/4 pound carrots, peeled, chopped
3/4" piece ginger, peeled, chopped
2 cloves garlic, chopped
1/2 tsp cinnamon
3/4 pound tomatoes, cored, chopped
Half of a 19 oz can chickpeas, drained
1/4 cup plain Greek yogurt
In a pot, heat 1/2 tbs oil. Season lamb, sear until browned. Transfer lamb to a cutting board. *Add remaining oil and carrots to pot, cook 3 min. Add ginger, garlic, and cinnamon, cook 1 min. *Stir in tomatoes and 2 cups water. Return lamb to pot, simmer 15 min. Transfer lamb to a cutting board. Shred lamb, then return it to pot. Stir in chickpeas, cook to heat through. SERVE WITH YOGURT & ENJOY...
