VEGGIE BURGERS---These burgers are very good and easy to make.
MAKES 4 SERVINGS.
5 hamburger buns
19 oz can chickpeas, drained
1 egg, beaten
1 onion, chopped
1 pound tomatoes
3 tbs olive oil
2 tsp red wine vinegar
1/4 cup plain Greek yogurt
1 head lettuce
In a blender, pulse 1 hamburger bun into crumbs. Mix 1/2 cup crumbs, chickpeas, egg, 1/3 cup onion, salt and pepper until chunky. *Cut tomatoes into chunks. In a bowl, toss tomatoes with remaining onion, 1 tbs oil, and vinegar, season. *In a skillet, heat remaining oil. Cook patties until golden. Split and toast remaining buns. Slather bun bottoms with yogurt, top each with a patty, lettuce, and a bun top. SERVE WITH TOMATO SALAD & ENJOY...
