VEGGIE COUSCOUS & CORNISH-HENS
MAKES 4 SERVINGS.
2 Cornish hens
2 lemons, 1 sliced, 1 zested and juiced
2 tbs unsalted butter
1/2 onion, chopped
1 1/2 cups couscous
1 3/4 cups chicken broth
1 zucchini, sliced
1/4 cup honey
1 tsp cumin
1/2 tsp paprika
Heat oven to 450 degrees. Cut hens in half. Place hens on a baking sheet, season. Scatter lemon slices around hens. Roast until hens are golden 20 min. *Melt butter in a pan. Add onion, and a pinch of salt. Cook until softened. Add couscous, cook until lightly toasted. Add broth, season. Bring to a simmer, cook until most of the liquid is absorbed. Stir in zucchini, cook until tender. *Combine honey, cumin, paprika and lemon juice. Brush on hens, continue roasting until cooked through 7 min. Stir zest in couscous, season. SERVE with hens, drizzle with pan juices & ENJOY...
