BACON EGG BAKED-POTATOES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
4 potatoes
6 slices bacon
1/4 cup milk, warmed
1 cup shredded cheddar cheese
2 green onions, sliced
1 tbs chopped parsley
4 eggs
Heat oven to 375 degrees. Line a baking sheet. Pierce potatoes, place on a plate, microwave until tender, set aside. *Cook bacon in a skillet until crisp, reserving drippings, chop 4 slices, break other 2 slices in half, set aside. *Slice off top 1/4" of potatoes lengthwise. Scoop flesh from 3 potatoes into a bowl. Repeat with remaining potato but discard flesh. Add 2 tbs bacon drippings and milk to bowl, mash until smooth. Stir in cheese, green onions, parsley, chopped bacon, salt and pepper. *Season inside of potato skins. Divide filling among skins, press down the center of filling to create a long, deep well. Brush outside of skins with remaining bacon drippings, transfer to baking sheet. *Crack an egg into a cup, then pour into each potato. Transfer to oven, bake until whites are set 25 min. Season. Top with halved bacon strips. SERVE & ENJOY...
