VEGGIE SALAD
MAKES 4 SERVINGS.
Halve 2 eggplants lengthwise, rub cut sides with 1 smashed garlic clove, brush with oil, sprinkle with salt. Grill until charred. Let cool, then chop. Whisk 3 tbs plain yogurt, 2 tbs oil, 1 tsp red wine vinegar, and 1 grated garlic clove, season. Toss with eggplant, 1 cup halved cherry tomatoes, and 1/2 cup chopped mixed herbs. SERVE & ENJOY...
