SAUCY PORK-CHOPS
MAKES 4 SERVINGS.
1/3 cup peach jam
2 tbs ketchup
1 tbs plus 1 tsp Worcestershire
2 tbs cider vinegar
2 tbs unsalted butter
12 oz green beans, trimmed
1 1/2 cups flour
1 tsp baking powder
1 egg white
Oil
4 pork chops
Cook jam, ketchup, 1 tbs Worcestershire, and 3 tbs water in a skillet until thickened. Whisk in vinegar and butter. Remove from heat. Put green beans in a bowl, sprinkle with water, season. Microwave until tender 10 min. *Whisk 1 cup flour, baking powder, 1/2 cup water, egg white, and remaining Worcestershire in a bowl. Put remaining flour in a dish. Heat oil in a skillet. Dredge pork chops in flour, dip in batter. Fry until golden. Drain. SERVE with peach sauce and green beans & ENJOY...
