SPICY GINGER WATERCRESS
MAKES 4 SERVINGS.
Remove tough stems from 2 bunches watercress, transfer to a bowl. Heat 3 tbs oil in a skillet. Add 1 tbs chopped peeled ginger, 1 minced garlic clove, and 2 tsp hot sauce, stir-fry 30 seconds. Stir in 2 tbs red wine vinegar. Pour warm dressing over watercress, toss. Season with salt. SERVE & ENJOY...
