OLD-FASHIONED BISCUITS
MAKES 10 BISCUITS.
2 cups flour
1 tsp sugar
1 tbs baking powder
1 tsp salt
8 tbs lard
1/2 cup milk
Unsalted butter
Heat oven to 425 degrees. Mix flour, sugar, baking powder, and salt in a bowl. Cut lard into cubes, add to dry ingredients. Cut lard into flour, until lard is in pea size bits. The mixture is ready when the mixture resembles coarse meal. *Make a well in flour mixture, pour in milk. Mix until combined, then knead until dough comes together into a ball. Turn dough out onto a floured surface. Knead until smooth and pliable, do not overwork. Roll out into a 1/2" thick round. *Smear a skillet with butter. Cut out 3" biscuits using the mouth of a glass. Put biscuits on pan. Reroll scraps, cut out more biscuits. Dot with butter. Bake until golden 20 min. SERVE & ENJOY...
