EGG & SALSA ON BACON-TORTILLA
MAKES 2 SERVINGS.
FOR SALSA---
3 tomatoes
1 serrano chile pepper
1/4 onion, chopped
1 clove garlic, chopped
1 tbs oil
FOR TORTILLAS---
3 slices bacon
1/2 cup masa harina, instant corn flour
1/2 tbs oil
FOR EGGS---
1 tbs oil
2 eggs
1/4 cup crumbled Cotija cheese or queso fresco
MAKE SALSA---Heat broiler. Spread tomatoes and pepper on lined baking sheet. Broil until charred. Wrap in foil, set aside. Rub off charred skins, remove pepper stems. Pulse tomatoes, pepper, onion, garlic, and salt in a processor or blender until chunky. *Heat oil in a skillet. Add tomato mixture, cook until thickened. Transfer salsa to a bowl, keep warm. PREPARE TORTILLAS---Cook bacon in a skillet until crisp. Drain, reserving drippings in skillet, chop bacon. Combine all but 1 tbs bacon, masa harina, and a pinch of salt in a bowl. Stir in 3/4 cup water, knead in bowl until dough is pliable. Divide dough into 4 pieces, roll each into a ball, then flatten into 4" disks. COOK TORTILLAS---Heat oil in a skillet. Add tortillas, cook until golden on both sides. Keep warm. MAKE EGGS---Add oil to bacon drippings in skillet, heat. Add eggs, season, fry until whites are set. Spoon some of the salsa onto 4 plates. Place a tortilla on each plate, top with a egg. Top with more salsa, then sprinkle with cheese and bacon. SERVE & ENJOY...
