BERRY COBBLER WITH OATMEAL
MAKES 6 SERVINGS.
FOR THE FILLING---
Unsalted butter
6 cups blueberries
1/2 cup sugar or Splenda
3 tbs flour
2 tbs lemon juice
Pinch of salt
FOR THE TOPPING---
3/4 cup brown sugar or Splenda
3/4 cup flour
1/2 cup rolled oats
1/2 cup almonds, chopped
1/2 tsp lemon zest
1/4 tsp cinnamon
1/2 tsp salt
6 tbs unsalted butter
Heat oven to 375 degrees. Butter a baking dish. MAKE FILLING---Toss blueberries, sugar, flour, juice, and salt in a bowl. Transfer to baking dish. MAKE TOPPING---Combine brown sugar, flour, oats, nuts, zest, cinnamon, and salt in a separate bowl. Work butter into flour mixture until coarse crumbs form. Scatter topping over blueberry mixture. *Set dish on a baking sheet, bake until topping is golden and filling is bubbling 50 min. Let cool slightly before SERVING & ENJOY...
