[SimplifyMe] Veggie {Burritos} with Corn-Salsa

 

VEGGIE BURRITOS WITH CORN-SALSA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 bunch cilantro, chopped
1 clove garlic
1/2 tsp chili powder
1 cup rice
15 oz can spicy black bean soup
10 oz pkg frozen chopped spinach, squeezed dry
2 cups frozen corn
1 tomato, diced
Juice of 1 lime
4 flour tortillas
2 cup shredded pepper Jack cheese

Puree all but 3 tbs cilantro with 2 cups water, garlic, chili powder, and salt in a blender until smooth. Transfer to a pan along with rice, bring to a boil, cook until liquid is absorbed, stir, let cool 5 min. * Bring bean soup to a simmer in a pan, cook until liquid is slightly reduced. Stir in spinach, return to a simmer. Remove from heat, keep warm. Toss corn, tomato, lime juice, reserved cilantro, salt, and chili powder in a bowl. *Warm tortillas in a skillet. Divide rice, bean mixture, and cheese among tortillas, top with corn salsa. Fold up bottoms of tortillas, fold in sides, roll up. SERVE with remaining corn salsa & ENJOY...
