[SimplifyMe] Canning Vanilla-Nectarine {Jam}

 

CANNING VANILLA-NECTARINE JAM
MAKES 7 JARS.

2 pounds nectarines, pitted, cut into pieces
1 pound raspberries
2 tsp lemon zest
2 tbs lemon juice
1 vanilla bean, split lengthwise
2 cups sugar
3 tbs instant pectin

Scrape out vanilla seeds into a bowl. Add nectarines, toss with zest, juice, and 1/4 cup sugar, let sit 15 min. then toss with raspberries. In a bowl, whisk together 1 3/4 cups sugar and pectin. Sprinkle sugar mixture over fruit, then stir 3 min. Transfer to seven 8 oz jars, leaving space at the top of each jar. Refrigerate 3 days before serving or freeze...
