SLOWCOOKER JAMBALAYA
MAKES 6 SERVINGS.
1 pound sausage, sliced
2 bell peppers, chopped
2 stalks celery, sliced
1 bunch green onions, chopped
28 oz can diced tomatoes
1 cup rice
1 1/2 cups chicken broth
2 tsp Cajun seasoning
2 bay leaves
1/2 tsp thyme
1/8 tsp cayenne pepper
1 pound shrimp, peeled, deveined
Chopped parsley
Combine first 11 ingredients in a slowcooker. Cook on low 4 hours, adding shrimp during last 20 min. of cooking. Discard bay leaves. SERVE topped with parsley & ENJOY...
