RICE WITH MARMALADE CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Cook 1 cup rice according to package directions, adding a 12 oz pkg frozen broccoli, chopped, during last 3 min. of cooking. In a bowl, whisk together 1/4 cup orange marmalade, 1 tbs cider vinegar, 1 tsp ginger, and 1/4 tsp red pepper flakes. Broil 4 boneless skinless chicken breasts until cooked through 10 min. basting with jam mixture during last 3 min. of cooking. SERVE with rice & ENJOY...
