CANNING PLUM-LEMON JAM
MAKES 7 JARS.
3 pounds plums, pitted, cut into pieces
2 tsp lemon zest
2 tbs lemon juice
2" piece ginger, grated
2 cups sugar
3 tbs instant pectin
In a bowl, toss together, plums, zest, juice, and ginger. In a bowl, whisk together sugar and pectin. Sprinkle sugar mixture over fruit, then stir 2 min. Lightly crush fruit mixture 1 min. Transfer to seven 8 oz jars, leaving space at the top of each jar. Refrigerate 3 days before serving or freeze...
