SHRIMP TOPPED ASPARAGUS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
18 oz pkg popcorn shrimp
2 pounds asparagus spears, trimmed
2 tbs oil
2 tbs balsamic glaze
1/2 cup shaved Parmesan cheese
Prepare shrimp according to package directions, keep warm. Heat oven to 450 degrees. Line a baking sheet with parchment. Lay asparagus on it. Drizzle asparagus with oil, season. Roast until lightly browned 15 min. Transfer asparagus to a platter. Drizzle balsamic glaze over asparagus, sprinkle with Parmesan. Top with shrimp. SERVE & ENJOY...
