RICE, LIME & FISH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
In dish, combine 1/4 cup cornmeal, 2 tbs flour, and 1 tsp paprika. Coat 4 fish fillets in mixture, season. In skillet, cook fish in 2 tbs oil until crispy. In bowl, toss 4 cups cooked rice and 1/2 cup chopped cilantro, season. SERVE with fish and 1 lime, quartered, & ENJOY...
