PASTA, VEGGIE & MEATBALLS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
12 oz pasta
2 bunches broccoli, cut into bite size pieces
8 oz Italian sausage, casings removed
1/4 cup oil
4 cloves garlic, sliced
Pinch red pepper flakes
1 egg
1/2 cup grated Parmesan cheese
Bring a pot of salted water to a boil, cook pasta as label directs, adding broccoli during last 2 min. of cooking. Reserve 1 cup cooking water, drain. Roll sausage into 20 meatballs. Heat 1 tbs oil in a skillet. Add meatballs, cook until cooked through. Drain. *Pour off drippings from skillet, add remaining oil, garlic, pepper flakes and salt. Cook 1 min. Add pasta, broccoli and meatballs. Whisk egg with cooking water in a bowl, add to skillet, stir until sauce thickens. Season. Divide pasta among bowls. Sprinkle with cheese. SERVE & ENJOY...
