SLOWCOOKER NACHO SOUP
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 tbs tomato paste
14.5 oz can diced tomatoes
1 potato, peeled, diced
1 zucchini, cut into pieces
1/2 onion, diced
1 jalapeno pepper, chopped, seeds removed
1 clove garlic, chopped
1 tsp oregano
1/2 tsp cumin
15 oz can hominy, drained
3/4 cup crushed tortilla chips
4 cups chicken broth
1 1/2 pounds skinless boneless chicken breasts, cut into pieces
2 tbs oil
8 oz American cheese, diced
1/2 cup milk
Combine first 10 ingredients in a slowcooker. Add tortilla chips, broth and salt, cook on low 7 1/2 hours. Add chicken, cook 30 min. Combine cheese and milk in a bowl, microwave until melted 3 min. SERVE soup topped with cheese sauce, tortilla chips and jalapeno slices & ENJOY...
