SPINACH CHEESE QUESADILLAS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
In processor or blender, puree 6 oz jar roasted red peppers, drained, and 1/4 tsp crushed red pepper for dip, season. In bowl, combine 12 oz frozen spinach, squeezed dry, 1 cup shredded mozzarella, 4 oz crumbled feta, and 2 cloves garlic, minced, season. Spoon mixture onto half of each of 4 flour tortillas. Fold tortillas in half, press to close. In dry skillet, cook quesadillas until golden. Cut each into 4 pieces, SERVE with dip & ENJOY...
