2 pounds strawberries, hulled, cut into pieces

2 apples, cut into pieces
1/4 cup mint
2 tsp lemon zest
2 tbs lemon juice
2 cups sugar
3 tbs instant pectin
In a bowl, toss together, berries, zest, juice, and 1/4 cup sugar. Fold in apples and mint, let sit 15 min. In a bowl, whisk together sugar and pectin. Sprinkle sugar mixture over fruit, then stir 2 min. Lightly crush fruit mixture 1 min. Transfer to seven 8 oz jars, leaving space at the top of each jar. Refrigerate 3 days before serving or freeze...
