EASY CHEESY-CORN ENCHILADAS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
8 corn tortillas
1 tbs oil
5 green onions, chopped
2 garlic cloves, chopped
1 1/2 cups corn
1/2 cup milk
2 cups grated Pepper Jack
10 oz can enchilada sauce
Heat oven to 350 degrees. Stack tortillas, wrap in foil, bake 10 min. Oil a baking dish. Warm 1 tbs oil in a skillet. Add green onions and garlic, cook 1 min. Stir in corn and milk, cook 10 min. Season. *Remove tortillas from foil. Set aside a 1/2 cup cheese for end. Take each tortilla, spoon a tablespoon of corn mixture and a tablespoon of cheese in tortilla. Roll up each tortilla, set in dish. Pour enchilada sauce over tortillas, sprinkle with reserved 1/2 cup cheese. Bake 20 min. SERVE & ENJOY...
